Castilla y León, with the province of Soria at the forefront, holds a privileged position in the production of the prized black truffle Tuber melanosporum. This fungus, one of the most valued in haute cuisine, has been part of the region’s ecosystem for centuries, and its cultivation has transformed the silvicultural and economic landscape of the area in recent decades.
