The Fungi Kingdom and the Mediterranean diet, ‘The Forest Pantry’

Description:

Taught by Melania Cascante, chef of the Los Villares de Soria restaurant (Soria). Melania Cascante will offer two presentations-showcookings on the same theme, one for professionals in the sector and the other for the public who are passionate about gastronomy.

In these workshops, she will present the importance of mushrooms in local gastronomy. The use of truffles, the introduction of mycological products, and the healthy combination with the Mediterranean diet for the prevention of diseases and improvement of quality of life. Pairing of chestnuts, truffles, and mushrooms. Intercultural cuisine with fungi from other continents.

Workshop 2 Name:

Spring truffles and mushrooms, ‘Mycological essence in miniature’

Description:

Taught by José Antonio Antón and Alejandra Antón, chefs of the La Chistera restaurant (Soria). José Antonio Antón will offer two presentations-showcooking, one for professionals in the sector and the other for the public who are passionate about gastronomy, both on the same theme, about seasonal mycology and the gastronomic value of black truffles.

In his presentations, he will share some of his best tricks for preparing miniature dishes and innovative tapas. One session will be aimed at professionals in the gastronomic sector, with a focus on advanced techniques and culinary applications. The other will be aimed at amateurs, with practical recommendations and recipes to enjoy at home.
